First things first: I’m pleased to announce the Bob’s Red Mill Protein Powder giveaway winner is: Molly R. who was emailed this morning. Congrats Molly and friends stay tuned for another awesome giveaway soon!
Tomorrow I leave for Italy!!!!!!! My husband and I will be traveling throughout the country for the next two weeks with a quick stop in London on Friday. I have some posts scheduled to share including a guest post, a delicious 4th of July recipe, and another giveaway. Lots of good stuff coming your way and I’ll be back in July to share some recaps, recipes, and some of my hotel room workouts. I’m supposed to be tri training so swimming and biking will take a backseat but we will be walking everywhere and I also brought some resistance bands to use for strength training. I am counting the seconds until we leave!
So since I’m heading to Italy it only seemed appropriate to share an Italian inspired recipe complete with basil and tomatoes. If you are lucky enough to have a green thumb and personally grow either in your home garden I am insanely jealous and impressed. It’s one of my goals in life to overcome my black thumb and grow my own garden… maybe one of these days, particularly one when I’m not living in a city and have ample room for herbs and veggies. Okay… on to the burgers!
Ingredients:
1 small basil plant
1 yellow onion
1 pint tomatoes
1 lb ground turkey
4 oz shredded mozzarella
1 TBSP garlic powder
salt and pepper to taste
olive oil
balsamic vinegar
Directions:
- Chop basil, onion, and tomatoes
- Mix ground turkey, salt/pepper, mozzarella, and garlic powder with chopped basil, tomatoes, and onion
- Form even sized patties by hand
- Heat pan with a splash of olive oil
- Cook patties 5-7 minutes, then flip over and continue for another 4-5 minutes until meat is thoroughly cooked
- Serve on top of greens or on a bun, with a splash of balsamic vinegar
Tastes just like summer! These could also be made on the grill but I’m a grill notice so I made them indoors. Have you ever grilled before? Have you been to Italy??
Have FUN!!! Good lawd, I love Italy. I shall have to make these to tide me over until our Italy trip this fall!
Have so much fun in Italy! I am jealous. I am also all about the turkey burgers lately. I made one with sweet potato last night, but this will be a nice switch up for next week! 🙂
