Perfect for your summer holiday parties and potlucks this strawberry basil salsa is sure to please any crowd! Plus it’s preparation is simple and quick!
As you guys know I’m currently in Italy but I can’t forget about my favorite summer holiday- 4th of July aka Independence day. Luckily I will be back in time to celebrate and what better way to celebrate than with friends, family, and delicious food? Between the summer holidays and your daily picnic there are potlucks and parties everywhere so you need a go to dish to bring-normally I’m inclined to make a veggie packed pasta salad or quinoa salad but this year I wanted to change it up with something a little more creative….
So since it’s the time of year strawberries are ripe and plentiful I figured they would make the perfect base for my new recipe. It’s fresh, flavorful, and super easy to make- an all around win. I had some friends stop by unexpectedly a few weeks ago and they asked for a snack so I was glad to have this on hand and they seemed to really enjoy it! You can dip tortilla chips, cucumber, etc. into it or you can use it as a topping on fish, chicken, or salad if you are eating at home. You could use the regular dark balsamic vinegar as well if you don’t have any white on hand and it should still taste great, but it won’t look as pretty.
Ingredients:
16 oz strawberries
1 small basil plant (~1/2 cup chopped basil)
1 red onion
1 TBSP olive oil
1 TBSP white balsamic vinegar
1 tsp lemon juice
1/4 tsp salt
Directions:
- Dice onion, strawberries, and basil plant after cleaning
- Measure lemon juice, vinegar, oil, and salt into a bowl
- Add the the onion, strawberries, and basil and mix thoroughly.
- Serve chilled.
I love fruity salsas, and strawberry and basil is such a great combination! I’m going to try this out soon.
