Have you ever seen the show Chopped?? I’ll admit it’s actually one of my favorites- taking 4 mystery ingredients and incorporating them into a delicious recipe?! Sign me up! Dannon challenged me to use 3 of the 5 mystery ingredients they chose to create something unique. Challenge accepted! This is something I frequently practice at home to use up leftovers and random ingredients so I was psyched to participate in such a fun challenge.
I opted to use the black rice, cannelloni beans, and roasted red peppers. I made rice and corn cakes to highlight the seasonality of corn and used the beans as a binder. I decided to use Dannon Light & Fit Greek nonfat yogurt pureed with the roasted red peppers to create a sauce. Personally, balance is the name of the game for most of my recipes. I like to balance salty with sweet, and spicy with creamy. The sweetness of the yogurt is balanced out with the hot sauce. I encourage you to make it as spicy as you’d like although I list 1-2 TBSP. I’m spicy intolerant so 1 TBSP did the trick for me.

Rice and Corn Cakes with Sweet Red Pepper Sauce
Ingredients
- 1 cup cooked rice
- 1 cup cooked corn
- 1 can cannelloni beans rinsed and drained
- 1 TBSP cumin
- 2 garlic cloves
- 1 egg
- 1 cup corn flour
- Olive oil
- 1 cup Dannon Light & Fit Vanilla Greek Nonfat Yogurt
- 1 jar roasted red peppers drained
- 1-2 TBSP hot sauce
- Scallions and cilantro for topping optional
Instructions
- Pulse together rice, corn, beans, garlic, and cumin in a food processer (do not puree)
- Mix in egg and corn flour (add flour gradually until batter is thick enough to roll into balls)
- Roll batter into even size balls, and then shape into patty
- Heat olive oil on stove and add patties, be careful not to crowd pan
- Cook on each side 3-4 minutes
- In a food processor grind red peppers, hot sauce, and yogurt until thoroughly combined into a sauce
- Serve patties warm topped with red pepper yogurt sauce
