So I’ve actually never cooked farro before… and I definitely cheated and bought the 10 minute bag from Trader Joe’s but I still got the full effect. YUM! I really really like the texture and it tastes somewhat nutty to me. My husband doesn’t share my love for all grains and prefers the more classic ones like pasta or rice vs couscous and quinoa…. But he enjoyed the change up with the farro. You can use it place of quinoa or brown rice, which is what I did here. I was going to make a quinoa dish but felt kinda meh about it… a trip to TJ’s always loads my kitchen with new and interesting things to try! Also I added to the interestingness by adding coriander seeds…. Just experimenting with my spice rack… had to google them but apparently they are related to the leaves of the cilantro plant. I didn’t taste cilantro at all when I ate it… I felt like the coriander seeds had a bit of kick to them… but anyways you should try them, they were super unique. The applesauce sounds weird too but just me, it works. You could probably experiment with other veggies as well. Let me know if you try it!

Ingredients:
1 head broccoli
1 pint cherry tomatoes
½ yellow onion
2 TBSP olive oil
½ TBSP garlic powder
½ TBSP thyme
½ TBSP rosemary
2 cups cooked faro
½ tsp ginger
2 TBSP applesauce
2 TBSP lemon juice
1 TBSP Dijon mustard
1 TBSP coriander seeds
1-2 TBSP warm water (to thin)
Directions:
1. Preheat oven to 400and chop the broccoli head and onions.
2. Add the tomatoes to the broccoli and onions, coat with 2 TBSP oil and add garlic powder, thyme, and rosemary
3. Roast at 400 degrees for 15-20 minutes depending on desired doneness of veggies
4. Cook farro according to package directions
5. Make the sauce, combine applesauce, lemon juice, mustard, and coriander seeds in mason jar with lid. Share thoroughly, add water as needed to thin the sauce.
6. Once the veggies and farro have cooked, top with the sauce and serve warm!
