This month’s Recipe Redux challenge is Taco Tuesday!
February 21 is a Tuesday. So show us your healthy, creative take on the taco.
Who doesn’t love tacos!? Actually me… haha. I’m definitely into Mexican/Tex-Mex but I prefer enchiladas or a taco salad. However I know everyone else loves tacos and the blog lacks a taco recipe so I decided to get creative and make a vegan taco! So I started thinking of ideas and obviously beans came to mind first since they are both vegan and Mexican but I wanted to take it up a notch and make it a little more meaty tasting… enter sunflower seeds! The seeds add a bit of a crunch and more texture to make these super delicious and nutritious. Beans and sunflower seeds are the perfect satisfying “meat” for Taco Tuesday with your vegan friends.
Bean and Seed Tacos
Ingredients
- 1 15 oz can garbanzo beans
- 1 cup sunflower seeds
- 1 TBSP olive oil
- 2 teaspoon chili powder
- 1 TBSP cumin
- 1/2 teaspoon salt
- 1 TBSP garlic powder
- 1 teaspoon onion powder
- 1/4 teaspoon pepper
- 1 TBSP liquid smoke optional
Instructions
- In a food processor ground up sunflower seeds and garbanzo beans
- Heat pan on stove top, add olive oil
- Add seed and bean meat and begin to saute
- Add in spices and cook for 5-10 minutes until "meat" is heated thoroughly.
- Serve in tacos or taco bowls. Add avocado, salsa, cabbage, peppers, or any desired toppings.
