Middle East-inspired cauliflower rice shares the warming spices traditionally used.  At the heart of Middle Eastern cuisine is a deep appreciation for fresh, seasonal produce, aromatic spices, and wholesome ingredients.

Have you ever tried cauliflower rice?? While I have nothing against white or brown rice (I eat it regularly) cauliflower rice is fun way to switch things up. I really enjoy cauliflower- cooked, never raw. Plus it has a great nutrition profile and can be made easily (when purchased in a frozen bag).

This Middle East cauliflower rice is inspired by a Lebanese restaurant I love… the complexity of the flavors stemming from that region is insane.  While I have never traveled to this area, I’m a huge fan of the food.  Always aromatic and delicious, my Middle East cauliflower rice packs a punch. It’s perfect as side dish or can even be eaten as main course.

Middle East Cauliflower Rice

Ingredients

  • 1 TBSP olive oil
  • 1 yellow onion
  • ¼ tsp cumin
  • 1/2 tsp coriander
  • ¼ tsp cardamom
  • 12 oz cauliflower rice
  • ¼ tsp Salt
  • 1/3 cup Pistachios
  • 1/3 cup Raisins
  • Chopped fresh parsley
  • Chopped fresh mint

Instructions

  • Heat olive oil in pan on stove top
  • Add onion and turmeric and cardamom
  • Cook until onion is softened
  • Add cauliflower rice and salt
  • Cook until cauliflower is thoroughly heated
  • Stir in pistachios and raisins and cook 1 minute
  • Remove from eat and mix in parsley and mint
  • Serve warm and top with remaining mint or parsley leaves for garnish
