It’s October so I’m trying to bust out a couple pumpkin recipes before the fall trend is over… so I present to you two wonderful pumpkin filled recipes using two different mixes from the Fit Body Bakery. Today I am sharing Carrot Cake Pumpkin Muffins!

Ingredients
3 cups/1 box Fit Body Bakery Motivator Muffin Mix
1 cup carrots, shredded
½ cup raisins
1 cup pecans
½ cup pumpkin
2 eggs
1 cup milk

Directions:

  1. Measure and mix dry ingredients
  2. Measure wet ingredients and combine with dry until just mixed- be sure not to over mix
  3. Bake at 350 for 20 minutes
  4. Allow to cool and serve warm or refrigerate for later
