Cauliflower has really had an amazing couple of years- from pizza, to smoothies, to “rice” it has been popping up everywhere! While I love cauliflower and it’s versatility the truth is it’s no super food. Carbs are essential to the diet so cutting them out completely is never a good idea, but it’s always great to add more vegetables to your diet.
Cauliflower veggie burgers are a great way to enjoy a more plant based burger. I personally enjoy both meat and veggie burgers, and they can both be part of a healthy diet. While I do consume meat products I try to chose plant based when I can. These veggie burgers are great for vegans, vegetarians, and meat eaters. I do recommend using BBQ sauce, ketchup, mustard, or a condiment of your choosing as veggie burgers lack the juiciness of meat based burgers.
Cauliflower Veggie Burgers
Ingredients
- 1 medium head cauliflower
- 2 cups walnuts
- 2 tsp cumin
- 1 tsp salt
- 1 TBSP garlic powder
- 1 TBSP smoked paprika
- 2 eggs
Instructions
- Preheat oven to 400
- Ground cauliflower and walnuts in food processor
- Combine with spices and incorporate evenly
- Add eggs and mix thoroughly
- Form patties with your hands and place on baking tray
- Cook for 20 minutes at 400 degrees
