Appetizer or Meal
Chicken parmesan meatballs can be served as an appetizer on toothpicks, in a cast iron skillet, or on even on buns if you aren’t feeling super fancy. Or they can be easily made as a meal for the family. I’ve used this recipe for a new moms and it was a crowd pleaser.
I used string cheese for the mozzarella but you could always swap in your preference and even change up the sauce. I thought making the meatballs would be more time consuming but it honestly only took about ten minutes to stuff and roll them. Chicken Parmesan is one of my all time favorite dishes so it is also sure to please a crowd especially in (meat)ball form.
Are Chicken Meatballs healthy?
Chicken vs beef is an interesting comparison… we typically think about chicken being healthier because it’s more lean and has less saturated fat. Chicken and beef contain roughly the same amount of protein but beef does have more nutrients like iron and zinc. But beef also has more calories and chicken still has a lot of vitamins and minerals. Generally chicken is the best for cardiovascular health but either can be enjoyed in moderation.
Are chicken parmesan meatballs good for diabetes?
Paired with green beans and spaghetti squash they are a complete and carb friendly meal! They can also be enjoyed with regular pasta, just try to include the veggies for additional fiber intake. The meatballs are also a great protein for meal prep because they can be paired with a multitude of foods and very easily frozen.

Chicken Parmesan Meatballs
Ingredients
- 1 lb ground chicken
- 1 cup whole wheat panko
- 2 eggs
- 4 oz mozzarella cheese I used 4 string cheese sticks
- 1 tsp dried basil
- 1 tsp garlic powder
- 1 tsp dried oregano
- Salt and pepper
Instructions
- Preheat oven to 350 degrees
- Combine ground chicken, eggs, panko, and dried herbs and spices
- Use hands to mix thoroughly
- Cut cheese into 24 pieces
- Form 24 small patties with ground chicken mixture and wrap each piece of cheese until ball is formed
- Space evenly on greased baking sheet
- Bake for 15-20 minutes or until chicken is completely cooked
- Serve in cast iron skillet topped with sauce and cheese or on toothpick with sauce for dipping
