A healthy and easy breakfast is a must most of the year but especially during back to school. Greek yogurt toast is a fun option for a healthy and easy breakfast that will be sure to please kids and adults alike. The flavors and topping ideas are endless and truly allow for creativity.

September means back to school for the kiddos, college kids, teachers, and it also means back to work for many professionals that have been working at home during the COVID-19 pandemic. I know some companies are reassessing in October and some have decided to have employees remain home indefinitely. Either way, there are many people looking for a quick and easy breakfast solution that doesn’t involve a drive thru.
Healthy
Yogurt toast is not only quick and easy, but it’s also healthy! Yogurt contains probiotics which are healthy bacteria that aid in digestion and boost the immune system. Yogurt is an excellent source of protein, calcium and potassium. It contains many vitamins and minerals and is relatively low in calories. Yogurt is a cultured milk product, meaning it has been soured and thickened by lactic acid-producing cultures.
I tend to reach for the Greek varieties over regular to have the additional protein. I frequently have clients ask me about dairy products and encourage them to consume dairy products regularly as long as they don’t exhibit any intolerances. The 2015 Dietary Guidelines for Americans recommend increasing intake of nutrient-dense foods, such as fat-free or low-fat dairy products, like yogurt. Yogurt is nutrient-dense and many yogurts are a good source of protein, calcium and Vitamin D.

Yogurt toast is the best quick and easy healthy breakfast option. It’s just like the popular avocado toast only packed with protein. Yogurt toast is simple to make and the delicious yogurt flavors speak for themselves. By using a hearty loaf of bread and some crunchy toppings yogurt toast provides perfect texture and balance to your breakfast. I elected to use pistachios, pecans, chia seeds, and figs as my toppings but you can get as creative as you want- do what fits your preferences! (My favorite combo was strawberry yogurt with pecans and pistachios.)
