Hemp seed cookies are here!!

Have you ever heard of hemp seeds? They have become more trendy the past few years along with chia seeds, flax seeds, and more. Hemp seeds pack more protein, iron, and omega 3’s than chia or flax seeds so they are  truly a nutritional powerhouse.

Hemp seeds are extremely versatile and are great for mixing into desserts or oatmeal, as well as topping your yogurt or salad. It’s a great way to get a little extra nutritional boost.

I’ve been a Manitoba Harvest ambassador for a couple years and always love using their hemp seeds in desserts.  (Full disclosure: these were samples sent to me but I was not asked or compensated to write this post). A couple weeks ago I made the most delicious hemp seed cookies and when I shared them on Instagram I had so many requests for the recipe. I didn’t measure everything exactly so I remade the hemp seed cookies so I could share them!hemp seed cookie ingredients

One of the only big changes I made was grounding the oats and hemp hearts to create a flour but if you don’t mind a more grainy consistency for your cookies then you don’t need to bother busting out the food processor.  Hemp seed cookies are also great for a snack or breakfast.

Hemp Seed Cookies

Ingredients

  • 1 cup oats
  • 1 cup hemp hearts
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 tsp vanilla extract
  • 1/3 cup peanut butter
  • 2 eggs
  • 1/2 cup chocolate chips

Instructions

  • Preheat oven to 350 degrees
  • Grind oats and hemp seeds in food processor (optional)
  • Mix together dry ingredients- oats, hemp seeds, baking powder, and salt
  • Mix together wet ingredients- peanut butter, eggs, vanilla
  • Add wet to dry and stir in chocolate chips
  • Bake at 350 for 15 minutes
