High Protein Chocolate Chip Cookies

garbanzo bean cookiesWell this was supposed to be posted on Tuesday but I messed something up and was out of the country (without my computer) so feel free to celebrate Valentine’s Day again this weekend or make some delicious cookies just because 😉

These high protein cookies have two secret ingredients that give them protein? Can you guess? No it’s not protein powder… I never really bake with protein powder- is it good? Should I try it?! Anyway the secret ingredients are garbanzo beans and garbanzo bean flour- double whammy! That being said these cookies definitely have a bit of a beany taste to them and are of the healthier tasting nature. So yeah- don’t serve these to anyone who strongly dislikes baked goods not made with white flour and white sugar. I personally have nothing against white flour and white sugar in baking but I really enjoy experimenting with some unusual ingredients (like beans in cookies) to make something interesting and tasty! valentines day cookies

Garbanzo beans and garbanzo bean flour come together to make these cookies high protein and high fiber so they pack a lot of nutrition and are filling. Plus the chocolate chips add that delicious sweetness. I’m typically not a huge cookie fan (I prefer brownies) but you really can’t beat a homemade chocolate chip cookie!

High Protein Chocolate Chip Cookies

Ingredients

  • 1 15 oz can garbanzo beans
  • ½ cup garbanzo bean flour
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 TBSP chia seeds
  • 1 cup nut butter
  • 1 tsp vanilla extract
  • ¾ cup maple syrup
  • ½ cup applesauce
  • ½ cup chocolate chips

Instructions

  • Remove skins from beans by rubbing between two paper towels.
  • Mash beans with fork
  • Add dry ingredients (flour,salt,baking soda, chia seeds) mix together with beans
  • Add wet ingredients (nut butter, vanilla, maple syrup, applesauce), stir thoroughly
  • Combine dry and wet ingredients, add in chocolate chips and stir until just combined
  • Bake at 350 degrees for 20 minutes

What did you do for Valentine’s Day this year?? I was in the Bahamas so it was a pretty excellent day but we did veer from our usual tradition of going out to a fancy dinner together. Unfortunately I don’t have any of these high protein chocolate chip cookies left over so I will be looking for something sweet and delicious to make again this weekend. What about you?
