Holiday Salad with Pumpkin Vinaigrette

Okay so I probably should’ve posted this in October but vacation plus a busy November delayed it! But it would be just as festive as a holiday salad as a fall salad (in fact I just changed the name of this post)! Pecans and cranberries cream everything holiday to me anyways, what about you?? Any quintessential foods you feel must be consumed during the holidays??

The holidays have really become less exciting as I’ve aged. I’m sure people with children that opens up a whole new world of excitement but sans child here. Plus Christmas honestly has not been the same since losing my dad a couple years ago, and perhaps it never will be the same again. That doesn’t mean I won’t enjoy spending time with friends and family and of course eating all the delicious food!

The salad comes together super easily which is why it’s perfect for a holiday. If you have more time on hand feel free to roast the pepitas and pecans and if you’re pressed on time skip the pumpkin vinaigrette and just use a pre-made dressing. If your family is anything like mine, most holiday tables become very carb heavy so a salad is the perfection addition to make the meal more balanced.

Holiday Salad with Pumpkin Vinaigrette

Ingredients

  • 1 10 oz bag Arugula
  • Dried Cranberries
  • Blue Cheese
  • Bacon
  • Pepitas
  • Pecans
  • 1/4 cup Pumpkin puree
  • 2 TBSPOlive Oil
  • 1 TBSP Maple Syrup
  • 1 TBSP Red Wine Vinegar
  • 1 TSBP water for thinning

Instructions

  • Put arugula in large bowl
  • Add equal amounts of dried cranberries, blue cheese, chopped bacon, pepitas, and pecans
  • In small bowl, mix together pumpkin puree, olive oil, maple syrup, red wine vinegar, and water to make dressing
