It’s time for Christmas desserts!! Usually cookies are the most popular recipe this time of year but I decided to take a stab on recreating one of my favorite candies this time of year- the peppermint patty! I made healthy peppermint patties with coconut cream a couple years ago but I thought I could make them healthier and more delicious enter homemade healthy peppermint patty bites. Mission accomplished!! No one would ever guess these guys are filled with sesame seed paste- yup that’s right it’s tahini! Buuuuuut when you add maple syrup and peppermint extract it tastes just like the traditional peppermint filling and has the perfect consistency. These peppermint patty bites are also super easy to make… the no bake is a huge appeal plus they are easily frozen and thawed for fresh eating. No one would even guess they are eating a healthy fat filled with calcium and B vitamins. And the dates are full of fiber. Healthy peppermint patty perfection. Enjoy!!
Homemade Healthy Peppermint Bites
Ingredients
- 12 oz dark chocolate
- 12 oz dates pitted
- 1/3 cup tahini
- 2 TBSP maple syrup
- 1 tsp peppermint extract
- Crushed candy canes optional
Instructions
- 1. Melt dark chocolate slowly on stovetop or in microwave
- 2. While the chocolate is melting, mix together tahini, maple syrup, and peppermint extract
- 3. Fill dates with tahini, maple, peppermint mixtures
- 4. Coat filled dates with melted chocolate and set on plate, sprinkle with crushed candy cane if using
- 5. Immediately transfer to fridge and allow chocolate to harden
- 6. Serve cold

wow this looks so delicious! I love that you used a date for the base! I love all of the flavors of Christmas but I think my favorite flavor is definitely chocolate/peppermint!
