Mediterranean Hummus Dip is a healthy and diabetes-friendly crowd-pleasing appetizer!

Summer is almost here! Bring on all the outdoor BBQS, flip flops, and beach towels! One of my favorite parts of summer is all the fun things that take place during this time of year. I love spending time outside with family and friends so the potlucks and cookouts make this time of year extra exciting.

I typically try to bring a dish that is somewhat healthy and has vegetables in it just in case no one else does I want to try to add some balance. Sabra hummus is a plant-based protein so it makes a solid base for my Meditteranean Hummus Dip. Plus National Hummus Day is TOMORROW so this dish the perfect way to celebrate!Healthy Hummus Dip

Mediterranean Hummus Dip is also the perfect snack eaten with chips, pita, or crackers. It can also be used a topping for a salad or chicken, really it’s super versatile and delicious. The dip is naturally gluten free and can be easily made vegan by omitting the feta cheese.

Mediterranean Hummus Dip 

Ingredients

  • 1 cucumber
  • 1 container Sabra hummus
  • 1 red pepper
  • 1/4 cup feta
  • kalamata olives to taste

Instructions

  • Chop cucumber, pepper, and olives.
  • In an 8x8 dish layer cucumber, then spread hummus, top with red pepper, then feta, and olives.
  • Serve cold.
