Peanut Butter & Co just launched Mighty Nut, their new powdered peanut butter that comes in 4 flavors: Originial, Vanilla, Chocolate, and Flax & Chia. The peanuts are roasted and pressed to remove fat… while I have no problem with #healthyfat I know some people with digestive issues do… enter Mighty Nut Powdered Peanut Butter! The texture and taste are upheld even with the fat removed. Plus it’s perfect for less mess, adding to smoothies and baked goods. I decided to take a savory take with the Flax and Chia variety to create an Asian stir fry sauce.

Ingredients:
¼ cup Mighty Nut Powdered Peanut Butter– Flax & Chia
¼ cup coconut milk
2 tsp lime juice
1 TBSP ginger
2 TBSP rice vinegar
2 TBSP tamari/soy sauce
1 TBSP agave
1 TBSP sesame oil

Directions:

  1. Measure and whisk together all ingredients
  2. Serve over top Asian stir fry veggies and whole grain such as rice or barley
