Preparation and Cooking Steps for Skillet Chicken Breast
- Preparing the Chicken: Season the chicken with herbs, spices, and a drizzle of olive oil. Allow it to marinate for at least 30 minutes to let the flavors develop.
- Searing the Chicken: Heat the cast iron skillet over medium-high heat and add a small amount of olive oil. Place the chicken in the skillet and cook until golden brown on each side, ensuring it reaches an internal temperature of 165°F (74°C). Transfer the cooked chicken to a plate and let it rest.
- Sautéing the Vegetables: In the same skillet, add the prepared vegetables, drizzle with olive oil, and sprinkle with salt and pepper. Sauté until the vegetables are tender-crisp and lightly charred, allowing their natural sweetness to shine through.
- Bringing it all Together: Return the cooked chicken to the skillet, nestling it among the flavorful vegetables. Place the skillet in a preheated oven and bake for a few minutes to ensure the chicken is fully cooked and the flavors meld together.

One Pot Tuscan Chicken
Ingredients
- 4 chicken breasts about 1lb
- 1 TBSP olive oil
- 2 cloves garlic chopped
- 1 TBSP dried basil
- salt and pepper to taste
- 16 oz mushrooms
- 1 cup chicken broth
- 1 can artichokes
- 1 jar sundried tomatoes oil drained
- Optional: fresh basil leaves
Instructions
- Heat olive on stovetop.
- Season chicken with salt, pepper, and dried basil.
- Add chicken to heated pan and cook thoroughly.
- Remove chicken from pan and set aside.
- Add garlic to same pan and saute 1 minute.
- Add mushrooms and cook for 5 minutes.
- Pour chicken broth over pan and cook an additional 5 minutes.
- Add chicken, artichokes, and sundried tomatoes to pan for another 5 minutes before serving.
- Garnish with fresh basil leaves if using.
