Orzo & Veggie Salad with Hummus Dressing

Tailgating is one of my favorite things to do and definitely brings back memories from my college days tailgating at Penn State.  One of my good friends parents had a RV and season tickets so they always put together the best and most elaborate tailgates for us (one time we had freshly steamed clams with pasta- fancy stuff).  I’ve also hosted my own tailgate for Pirates games and other Pittsburgh or Philly sports teams. The food is the most important thing, then of course making sure we have good quality craft beer.

Planning the menu for a tailgate can be difficult and I always like to make sure I am bringing a dish that includes fresh veggies since sometimes tailgates can be lacking in the healthy foods selection.  Sabra hummus is the perfect option to add to your tailgating menu- whether serving as a dip for veggies and chips or adding it into my spin on a pasta salad. #Twospoons of heaping hummus a day will fulfill your bean recommendation for the week.  I used orzo to change up the regular pasta salad but you could use most grains and any veggies you want…. This recipe would also work with any flavor hummus- next time I’m going to use Sabras Basil Pesto Hummus.  Enjoy and go team!

Ingredients:
8 oz orzo
1 head broccoli
1 pint cherry tomatoes
½ large red onion
½ cup olive oil
½ cup red wine vinegar
¾ cup Sabra Roasted Red Pepper Hummus

Directions:

  1. Cook orzo according to package directions
  2. Wash and chop vegetables
  3. Combine oil, vinegar, and hummus thoroughly
  4. Once pasta is cooked, add veggies, and dressing to coat everything evenly
  5. Store in fridge and serve cold
