It was too delicious not to share. And I love food and if you’re reading my blog so should you. Did you have any fun NYE or New Years Day plans?? (Sadly I was too busy taking pics of the food, I didn’t get one of my and my lovely husband).

Ok a new recipe…. I’ve made parsnip fries a million times, but I figured I should share the easy recipe! These are great for a simple and fun side dish…. Kid friendly, paleo, gluten free, vegan, low carb, etc. Pretty much perfect for any new diet you may have started in the new year… and if you’re like me and don’t follow any diets, they are delicious and nutritious for you too! Get creative and add your own spice mixtures with any type of oil… really the possibilities are endless. My favorite is probably the classic garlic, rosemary, and olive oil mixture. Let me know if you try these or create your own!

Ingredients:

1 pound parsnips

1 TBSP olive oil

½  TBSP dried rosemary

½ TBSP garlic powder

1 TBSP coconut oil, melted

1 TBSP cinnamon

1 TBSP toasted sesame oil

1 TBSP Old Bay

Directions:

1.       Preheat oven to 450

2.       Wash parsnips and assemble remaining ingredients separately by each division

3.       Cut the tops off the parsnips, quarter and slice to resemble fries

4.        Put 1/3 of the parsnip into olive oil/rosemary/garlic powder mixture, 1/3 into the coconut oil/cinnamon mixture, and 1/3 into sesame oil/Old Bay mixture

5.       Coat fries thoroughly in oil and spices, spread evenly on separate trays

6.       Bake on 1 side for 10-15 minutes until starting to crisp

7.       Take them out of the oven, flip over to other side and bake for additional 10-15 minutes
