I don’t think there’s very many people out there that feel they have too much free time. Most of us are busy with work, family, friends, commitments, etc. most days of the week. We are always searching for a quick and easy dinner recipe, so I’m sharing my personal favorites from the blog today. There’s a variety of options from vegan to meat based to vegetarian- something for everyone! I’d love to hear your personal go to for a weeknight meal.
Veggies can be interchanged but the quinoa provides protein and carbs, the veggies gives you some fiber and it all cooks pretty quickly.
While any sauce and veggie combination is always delicious with pasta this is one of my favorites, plus that tahini really is something special.
If your grilling season is over you could easily use the oven or a grilling pan. Hummus makes for a great spread but toppings are endless!
