Over last weekend I posted my tapas recipe with the rest of the reduxers and mine was kind of a two parter… enter Salsa Pizza! This was also inspired by recent Cabot Fit Team trip to Vermont when we went to American Flatbread. This was actually my second favorite pizza of the night which was an upset pick!

I’ve been on a big throw together a pizza for a fun but healthier Friday night dinner instead of going for takeout.  Pepperoni and cheese take-out pizza does have its place but definitely not something I’m craving every week… I like a little more freshness to round out my week. Get inspired for your Friday night and just throw together any leftover veggies, sauce, and some cheese. No fuss and pizza is always a crowd pleaser. The great thing about this recipe is that these are ingredients I almost always have in my house so I can see this being served on repeat. Also this would be a fun recipe for a picnic- hello summer holidays! (I can’t believe it’s already Memorial Day- where did this year go!? It’s almost half  over!)

Ingredients:

1 premade pizza crust

1 jar salsa (about 15oz)

4 oz shredded cheddar cheese (I used Cabot Seriously Sharp Cheddar)

1 can black beans, drained and rinsed

1 cup corn (I used frozen-if you do this, heat corn in microwave according to package directions)

1 red onion, chopped

Cilantro

Directions:

  1. Preheat oven according to pizza crust instructions
  2. Measure ingredients
  3. Spread salsa as the sauce across the pizza
  4. Add cheese
  5. Add black beans, onion, and corn
  6. Bake according to pizza package instructions
  7. Top with cilantro and serve warm
