So…. Any Top Chef fans?!?! Just me? That’s cool. I’m obsessed.

Anyways….  last week’s episode featured a spice mixture I had never seen before- Ras el hanout. It’s from North Africa but is also generally associated with Morocco.  I thought it would be a great new ingredient to try and I had most of the spices that create the mixture. But I didn’t want to stop there with trying something new…. I’ve been dreaming of creating lots of savory oatmeal dishes. There is something about the creaminess of oatmeal that other grains just cannot replicate… and while I usually enjoy oatmeal as a breakfast, I decided to challenge myself to make a savory dinner dish.  Enter Savory Moroccan Spiced Oatmeal!

Ingredients:
2 cups vegetable broth
3/4 cup oats
1 jar roasted red peppers
1/2 onion, chopped
1 can artichoke hearts
4 oz spinach (1/2 bag)
1 cup water as needed
Feta (optional)

Ras el hanout:
1 tsp cumin
1 tsp ginger
1 tsp salt
1 tsp pepper
1/2 tsp cinnamon
1/2 tsp coriander
1/2 tsp cardamom
1/2 tsp cayenne

Directions:
1. Bring broth to boil
2. Add onion, oats, and spices
3. Cook for 20 minutes or until oats are cooked thoroughly
4. Add spinach, peppers, and artichokes
5. Combine on low heat until spinach starts to wilt
6. Serve warm
