Happy March! One of the signature foods in March is the Shamrock Shake (or really anything green thanks to the widely celebrated St. Patrick’s Day). I personally love everything mint but I’m not a fan of the Shamrock Shake… most likely because I’m not a McDonalds fan, but I honestly haven’t had one in a very long time. Despite not having the shake in years the principles of it are pretty basic: minty, creamy deliciousness. And so the Shamrock Smoothie was born… super creamy, super minty, super delicious. More mint can be added if you’re a mint fanatic… the ½ TBSP was a faint mint taste. The avocado adds a slight greenness but don’t hesitate to make it greener by adding some greens (spinach preferably)- I promise, you won’t even taste them! I’m not lying when I say this is maybe the next smoothie I’ve ever made, it’s that delicious!
Ingredients:
1 cup coconut cream
6 coconut milk ice cubes
½ frozen banana
½ avocado
½-1 TBSP peppermint extract
1 scoop vanilla protein powder (I used Vega) http://myvega.com/
½ cup milk
Optional: handful of greens (spinach)
Directions:
1. Measure all ingredients directly into blender
2. Blend to smoothie perfection
