This weekend I attended at BBQ at a friend’s house and needed to bring an appetizer/snack to share… I usually like to try to bring food that is somewhat healthy to picnics/parties since you never know what else will be there! That being said I know not everyone is a super healthy eater but I’ve learned adding cheese to anything makes it more appealing, ha. These quinoa muffins were a hit! The recipe is super easy, all common ingredients and you could even tweak the veggie and cheese to create your own spin. I’m always glad when my “healthy” food gets eaten at a party/picnic, my friends gave these blog approval so here is the recipe:
Spinach Feta Quinoa Muffins
Ingredients:
3 cups cooked quinoa
6 oz feta
10 oz cooked spinach
1 TBSP garlic powder
1 tsp cumin
1 tsp basil
3 eggs, beaten
1.4 cup milk
Salt and pepper to taste
Directions:
1. Combine ingredients thoroughly
2. Spoon into muffin cups, filling the whole way
3. Bake for 20-25 minutes at 350 degrees
4. Allow to cool in muffin tin and then use a knife/fork to remove
