This spinach fruit smoothie is full of fruits and vegetables, with the addition of ginger and fresh mint its extra delicious and refreshing. One of my goals this year is to up my fruit intake- I love my veggies but some fruits are super sour or too sweet for me (sometimes I think it’s also the consistency!)Â Smoothies are a great way to incorporate frozen fruits for an easy nutrition boost during the winter months when produce is less seasonal. A high speed powered blender is a MUST for smoothies- especially when adding spinach or greens. Nothing is worst then spinach that isn’t properly pulverized in your smoothie.
Why a a spinach fruit smoothie recipe in January??
In January there is an increased demand for smoothies so I’m reposting this old recipe with some updated nutrition information and tips. The uptick is likely due to New Years resolutions and people trying to “eat healthier.” While I love a good smoothie (why are they so much better when someone else makes it!?) they aren’t all actually healthy. To create a well balanced smoothie include a fruit, veggie, protein, and something for extra flavor (this can be fat like avocado or peanut butter) and a special touch (like ginger or mint!) While using any fruit will usually work the only vegetables I’ve had the best results with are spinach and riced cauliflower (preferably frozen). Even in this spinach fruit smoothie you can likely switch out the fruits and add the cauliflower to change it up.

The right consistency is key and differs for each individual- I like my smoothie thick enough to eat with a spoon but my husband likes it super thin.

Spinach Fruit Smoothie
Ingredients
- 1 apple, chopped
- 1 handful raw spinach
- 1 cup frozen pineapple
- 1 tsp lemon juice
- 2 tsp minced ginger
- 1/2 cup mint leaves (can increase or decrease based on desired taste)
- 1/2 cup milk
Instructions
- Blend ingredients, serve chilled

Ginger is my all time favorite! Seriously. Ask anyone who knows me…I LOVE ginger! I’ve never tried adding mint to a smoothie, though, so this recipe intrigues me! Cool! Thanks for sharing 🙂

I am totally in a lemon ginger phase right now. I had a kombucha with lemon ginger and cayenne pepper yesterday and it was awesome. Loving the flavors in this smoothie!
