Salsa Pizza/ Cabot Fit Team Recap
I had the best time ever in Vermont earlier this year with the Cabot Fit Team! We ran a half marathon and ate lots of delicious food plus enjoyed each others company. Post trip I created two recipes inspired by some of the great food we had during the trip.
When given the task of coming up with a recipe with walnuts I decided to create a healthy snack that could also be breakfast or even a dessert. Super easy to make and full of nutrition!

Looking Back on the Most Difficult Year of my Life
This was a difficult post to write but it was very therapeutic to talk about what a year without my dad has been to me. It’s still something I struggle with every day especially during the holiday season.
Italy Recaps: 1, 2, 3, and 4
Starting with Naples and Postitano, then to Rome, then Florence, and finally ending in Venice, I shared our epic Italy trip spanning over 2 weeks. (It took me a lot longer to create the recaps!)
The perfect workout out for traveling… I completed this workout multiple times during our Italy trip and it’s something I will definitely use in future trips!
Spiralized Vegetable Polenta Lasagna
Who doesn’t love Italian? I kicked it up a notch by adding lots of veggies including spiralized squash and zucchini. This is one of the meals perfect to make for a Sunday night dinner and eat the leftovers for lunch throughout the week.
This was my 2nd tri of the season and it was super fun to completed one in my hometown so my family could attend. Even though it was super hot out and I didn’t have my best race I still placed 2nd in my age group which was a pleasant and exciting surprise!

30 by 30: Bucket list update to celebrate my 30th birthday!
For my 29th birthday I shared a list of things I would like to do before I turned 30 so this is the update on how much I had accomplished. How do you think I did with my list??
Blueberry Oatmeal Breakfast Cake
Easily the recipe I made the most this year so it is a must share! It’s simple and delicious and you could really substitute any fruit you wanted and use frozen as well. Go try it now!
Italian classic meets pumpkin- perfect for a hearty fall meal. Carbonara is one of my all time favorite dishes so I wanted to try to make it a little healthier and fun. I wish these photos had turned out a little better so I’ll have to make it again soon and reshoot it!
Even though this was my 2nd marathon I sort of considered it my first (I explain more in post) so I was really proud of overcoming really crappy weather (hello 30-40 mph winds) and having a good time. I can’t wait to run my 3rd marathon in 2017, hopefully with training more than 10 weeks this time!

What a great year. I loved following along on your marathon journey this year. And i seriously can’t wait to try that strawberry basil recipe….maybe once strawberries actually have taste again.
I hoping next marathon/race I will have more of a training plan to share and do weekly recaps sit it’s easier to follow along. Yes definitely something to pin or save for summer!
