The first recipe of 2017 is a super easy one- great for anyone trying to eat more plants and less meat in the New Year. Sheet pan dinners were all the rage in 2016 so this vegan version with tofu should be a hit!
Have you ever tried tofu?? It should be a year of trying new things and new foods. Part of my wellness program is to focus on eating more fruits and vegetables and one of the weekly challenges is to try a new to you fruit or vegetable. Anyways… tofu… it must be pressed for good flavor. I wrap the tofu in a clean dish towel, put it on the cutting board, and set a cast iron pan on top of it. Super fancy pressing method, I know. You can also buy a tofu press, but you honestly can make do with a homemade one. Pressing the tofu makes all the difference for flavor… I kept it simple here but you could add ginger, lemon juice, vinegar, and more spices. Experiment a little and step outside your comfort zone!
Vegan Sheet Pan Dinner
Ingredients
- 1 block extra firm tofu
- 2 medium sweet potatoes
- 3 cup broccoli florets
- ¼ cup soy sauce or tamari
- 2 TBSP garlic powder
- 2 TBSP olive oil
- Salt and pepper to taste
Instructions
- Press tofu 30-60 minutes.
- Preheat oven to 400 degree Fahrenheit
- Chop sweet potatoes, broccoli and tofu into ½ inch cubes and toss with soy sauce, garlic powder olive oil, salt and pepper
- Put sweet potatoes in oven to start baking for 10 minutes (total cook time 40 min)
- Add tofu to sweet potato pan and bake for additional 10 minutes (total cook time 30 min)
- Add broccoli to pan and bake for 20 minutes (total cook time 20 min)
- Once everything is properly browned and roasted, enjoy!
Sheet pan dinners make for super easy, practical meals, which is why they were so popular last year. Most versions use some form of meat so my vegan take is much needed.
